Easy Peasy Stir Fry
Ingredients
1 tbsp coconut oil
500g chicken or pork mince
1/2 white cabbage, shredded
1 large carrot, grated
2 garlic cloves, minced
1 tbsp fresh ginger, finely grated
¼ cup gluten free soy or tamari sauce
2 tsp sesame oil
1 large handful bean shoots
1/3 cup spring onions, diced
Method
Heat the coconut oil in a wok or large pan over medium heat. Add the garlic and ginger and cook for about 1 minute. Then add the mince and cook until the meat is fully cooked. Add the cabbage, carrot and tamari and stir to combine. Cook until the cabbage has softened slightly. You want the cabbage to still have some texture.
Remove from the heat and stir through the sesame oil and bean shoots. Top with the spring onions to serve.
