Cabbage Carbonara
Ingredients
6 slices of bacon, diced
½ white cabbage
Shredded 4 cloves of garlic peeled
¼ olive oil
1 tsp sea salt Sauce
½ cup coconut cream
2 egg yolks
4 tbs butter, melted
Black pepper, freshly ground to taste
Method
Using a small food processor or stick blender, blend the garlic cloves, salt and the olive oil until smooth. In a separate small bowl, combine the coconut cream, egg yolks and butter. Pour 1 tablespoon of the garlic mixture into a large frypan on medium heat. Add the bacon and cook for a few minutes until browned. Add the cabbage and cook until slighted wilted. Add the cream mixture and combine. Add salt and black pepper to taste.
