Garlic, Lemon and Thyme Roasted Chicken

I love using versatile chicken chops for a easy, satisfying dinner. This recipe uses the classic combination of garlic, lemon and thyme, but you could always substitute another herb for the thyme if you prefer. I’m sure this will be a family favourite in your house.

Ingredients

6 chicken chops with skin on, organic/fee range if possible
2 cloves garlic, minced
1 tsp fresh lemon zest
2 tbs fresh lemon juice
1 tbs fresh thyme, finely chopped
1 tsp sea salt
Freshly ground pepper, to taste
2 tsp olive oil

 Method

Preheat the oven to 210 C.

Combine all the ingredients, except the chicken. in a small bowl. Place chicken in an oven proof pan and pour over the marinade.  Mix to fully coat the chicken. For an even tastier result, you can marinate the chicken in the refrigerator for 1 hour or even overnight, if you like.

Cook the chicken skin side up for about 30-40 minutes, depending on the size of your chicken chops, until the skin is brown and crispy.
