Tray Baked Red Cabbage

Ingredients

1/2 head red cabbage
1/2 lemon, juiced
2 cloves of garlic, peeled and minced
2 tbsp olive oil
Sea salt and pepper, to taste

Method

Preheat the oven to 180 C and line a baking tray with parchment paper. Cut the cabbage into 2 cm thick wedges and place in a single layer on the tray.

Mix the lemon juice, garlic and olive oil in a small bowl and pour over the cabbage pieces. Sprinkle with sea salt and pepper to taste.

Bake in the oven for 35 - 40 minutes, until the edges start to brown and go crispy.
