Grain Free, Refined Sugar Free, Egg free ANZAC Cookies
Ingredients
150 g almond flour
1 cup flaked almonds
1 cup desiccated coconut
1/2 cup sunflower seeds
1/3 tsp sea salt
110 g honey
1 tbs black strap molasses
60 g unsalted butter
1 tsp gluten free baking soda
2 tbs water
Method
Preheat oven to 140 C (Fan Forced). Combine dry ingredients in bowl Put honey, molasses and butter in saucepan, heat but don't boil Combine baking soda and water in small bowl. Add to heated honey mixture. When mixture froths, add to dry ingredients and combine. Make rounded tablespoons of cookie mix and press into cookie shape onto prepared tray, lined with baking paper. Bake for 20-25 min, until a deep golden colour. Allow to cool for 10 minutes before transferring to a wire tray to cool completely. We love making ANZAC cookies in our house. This recipe was a hit!
